I have found some great maple recipes that are simply delicious so I thought I would share.

Maple Yams
These are so so good!

3 large yams that are cut in 4 lengthwise
¾ cup of maple syrup
1 teaspoon of nutmeg
1 ½ teaspoons of cinnamon
½ cup of butter, sliced

Preheat oven to 325. Place yams in a baking dish with the skin side facing down. Pour the maple syrup over the yams and sprinkle the nutmeg and cinnamon over the yams. Add the slices of butter and bake for an hour.

Kielbasa Stir Fry

1 package of kielbasa
One package of frozen vegetable of your choice (best with mushrooms, onions or corn)
One cup of rice
½ cup of maple syrup

Slice kielbasa and add to heated skillet over medium heat. Add maple syrup and stir to coat kielbasa. Add vegetables and cover for 15 minutes. Meanwhile, cook rice separately and serve kielbasa over rice.

Maple Yogurt Salad Dressing

¼ cup of maple syrup
1 ½ cups of plain yogurt
2 tablespoons of heavy cream

Mix together maple syrup and cream in a bowl. Whip by using a beater on low speed until smooth. Add in the cream and, on high speed, beat until creamy. You can serve this dressing with fresh fruit. Any unused dressing will stay good in the refrigerator for three days. If you don’t want to use yogurt, you can use sour cream instead.
